Mutton holds a special place in the hearts of non-vegetarians, with countless recipes to tantalise the taste buds. Among these, Mutton Kulambu is a top contender. While it may seem like a complex dish, creating a delicious mutton gravy is easier than you think, especially when you use a pressure cooker. Let’s explore a simple and delightful method to prepare this mutton gravy using a pressure cooker while ensuring a delicious outcome.

Mutton requires careful marination and thorough cooking to unlock its distinctive taste. A medley of spices such as cloves, cardamom, coriander powder, mace, and nutmeg are generously used to elevate the meat’s rich essence. Yoghurt, paired with gentle spices and sometimes vinegar, serves as an excellent choice for creating a flavourful and tender base for marinating mutton.

Ingredients:

½ kg Mutton

2 Potatoes

2 Onion

1 Tomato

2 Green chillies

1 tbsp Ginger garlic paste

1.5 tbsp Chilli powder

1 tsp Cumin powder

1 tbsp Coriander powder

1 tbsp Mutton masala

¼ tsp Turmeric powder

1 tsp Fennel seeds

2 Bay leaves

1 Cinnamon

3 Cardamom

3 Cloves

3 tbsp Oil

¼ cup of Curd

Salt

2-3 cups of Water

How to Make?

Step 1: Start by marinating the mutton with a pinch of turmeric and salt.

Step 2: Place a pressure cooker on the stove and heat some oil.

Step 3: Add fennel seeds, bay leaves, cinnamon, cardamom, and cloves, and saute for 10 minutes until they release their aromatic flavours.

Step 4: Now, add two chopped green chillies, onions, and ginger garlic paste into the cooker. Saute the mixture for about 10 minutes until the onions turn golden brown.

Step 5: Once everything is fried well, add chopped tomatoes and saute with chilli powder, coriander powder, mutton masala, and salt as needed. After sauteing for an additional 5 minutes, add yoghurt.

Step 6: Add the marinated mutton to the mix and saute until it’s well-coated with the flavourful spices. Add the diced potatoes and the required amount of water. Cover the pressure cooker and let it cook until you hear 4 whistles.

Step 7: When the whistle stops, open the lid, and you’ll find the mutton tender and perfectly cooked.

Step 8: Serve it hot, paired with steamed rice or your favourite bread. The combination of flavours is sure to delight your taste buds.
